Sweet Potato Salsa
Ingredients:
1 sweet potato – diced
1/2 red pepper – diced
1 slice red onion – diced
1 green onion – diced
1 spoon chopped jalapenos in vinegar
2 spoons orange marmalade or apricot preserves
Juice of one lime
Cholula Chili Lime – a couple squirts to taste
Salt and pepper to taste

Sure, you can buy a jar of salsa, there are lots of good ones. But where’s the fun in that? Besides, who ever heard of Sweet Potato Salsa? The novelty alone is worth the effort. And it tastes great. Go for it, you’re Cookin’ With Roscoe.
Here’s What You Do:

Peel and dice the sweet potato, cook in the microwave two minutes, remove and let cool.
Mix the rest of the ingredients together, then mix with the potato. Cover and place in fridge for at least an hour.
