Roscoe’s Beans and Rice Turkey Mole’ Enchilada

Ingredients:
Beans and rice – red or black (see Roscoe’s Red Beans and Rice)
Turkey Mole’ (see Sandy’s Mexican Fiesta)
Tortillas (see your grocer)
Cheese (Roscoe recommends shredded pepper Jack)
Enchiladas Are Easy
You go to a Mexican restaurant and order an enchilada, and you get a big plate that looks like it was really difficult to make, like it’s some secret only a gifted Mexican would know.
It’s Just A Casserole
And casseroles are fairly easy, and fun, to make. Enchiladas are no different. All you do, basically, is lay some filling on a tortilla, wrap it up, put it in a casserole dish (see how easy they make it? They even have special dishes), top it with some sauce and cheese, and pop it in the oven. You don’t even have to belong to Club Roscoe to be able to do that.

Not Your Usual Enchilada
Most enchiladas are pretty standard fare: beef, chicken, sometimes, if you’re in a really good restaurant, you can get a veggie or even a seafood enchilada (highly recommended).
This Ain’t No Taco Bell
Never heard of a Mole’ enchilada. But if you’ve got good mole’, why stop there? Put some of your good rice and beans in that tortilla (remember, it’s got kielbasa and bacon and ham hock in it, so it’s good already).

Soak The Tortilla
This is a must if you want delicious enchiladas. A little known secret that Roscoe discovered in his travels (okay, he may have been fleeing a certain Mexican border town, but they never caught him, and besides, he was innocent; mostly). Whatever you’re going to cover your enchiladas with: usually some kind of sauce (hence the term: Enchilada sauce), just dip your tortilla in it before you put the filling in. It adds heaps of flavor and keeps your enchilada moist (and we all know moist is always good).
Enhance The Filling
Slather the filling with some of that sauce, and some cheese. Then roll them up, place gently into the casserole dish next to each other (they can touch, they don’t mind), and cover with more sauce, then with the cheese of your choice (shredded pepper jack is pretty good here).

Ready for the oven
Into the Oven
350 for 30 minutes. Pull it out, dish it up with some Sweet Potato Salsa (recipe to come), and don’t forget the Margarita or cold Mexican beer.
