Roscoe’s Sweet Potato Kielbasa Soup

Ingredients:
2 links smoked Kielbasa – chopped
8 (or so) medium sweet potatoes – diced medium (1/2 in.)
1 big red onion, chopped
1 red pepper – chopped
garlic – as much as you like (4-6 cloves)
stock – chicken or beef, 8-10 cups
Worcestershire
Cholula
wine – whatever you’re drinking while you cook
Salt, pepper, cayenne
It’s Soup Weather Again
Fall: Roscoe’s favorite time of year. Football, the World Serious, and soup. Good, hearty, tasty, thick soup. Nothing wrong with a good pot of chicken soup, if that’s what you like. But Roscoe likes to put real flavors into a pot, and there’s only so much you can do with chicken soup. After all, that’s why they invented Cholula. And kielbasa.

Roscoe’s Favorites, All In One Pot
Kielbasa, sweet potatoes, bacon, and garlic. How can you go wrong with a pot full of that? Add some red peppers, onion, and your best stock (Roscoe recommends beef stock), and it’s gonna be some kind of good.
Here’s What You Do:
Saute’ chopped bacon, discard some of the fat (or not). Add chopped kielbasa and chopped red onion, season with salt and pepper, then add garlic and red pepper. A few splashes of Worcestershire, Cholula, and a glug or two of wine (red or white, take your pick). Let it all cook a few minutes, then add the diced sweet potato. season it all again (with whatever you think will make it taste good), mix it all together and dump in the stock. Bring Out The Hand Blender
Blend the soup about halfway, leaving some chunks. Hey, if you like it smooth, go all the way, Roscoe always says cook it the way you like it.
Here’s The Secret
Put the whole pot in the fridge. The flavors will meld and it’ll get a little thicker. Warm it up slowly, stirring often, don’t let anything burn on the bottom. Serve with some crusty bread.
