Carnitas Means Pork
Okay, you knew that. And you also know how to roast or smoke (for those of you who have smokers) a pork butt and turn it into that most delicious and succulent dish we call PULLED PORK. And when it’s done, and you’ve pulled it and sauced it to perfection, and certainly tasted it along the way, because there’s nothing better than warm pork right off the butt (no one ever said this is a family site), you’ve got to serve it.
A Simple Taco
This is actually one of the easiest ways to go, along with one of the tastiest. Just set out a mound of pork next to some grilled tortillas (rub a little olive oil on ‘em first) and some toppings: salsa, avocado (or guacamole), diced red onion (or green), some pepper jack cheese maybe, cilantro or lettuce, and let everyone go at it and make the taco of their choice.

This takes a little more effort, but it’s worth it. Saute’ some onions, red peppers (or whatever kind you like) and garlic in olive oil, Worcestershire and Cholula, and a glug of red wine. Let it simmer down, then add your pork. Mix it well, then add your barbecue sauce, and mix until all the pork is coated and warm.
Serve On Tortillas
