Ahhh, how'd you know? I'm doing some pulled pork for our poker game on Saturday night. I've been learning the ropes with my new smoker. I'm thinking this one should be real good. I've got plenty of time allocated for the butt to cook. I have a good rub, and will hit it with a baste before it goes in, then about halfway through or so.

After pulling, we'll have sammiches, with two sauces (one mustard and one vinegar-based) to go on as desired. Baked beans and cole slaw. Maybe a beer or three. Yum.

I should even have leftovers to make tacos!

Even your wife and kids will like the tacos, they'll just wonder why they can't get 'em that good at their local stand.

What do you do with leftover ribs? Wait, that's an oxymoron. Okay, it could happen. Say it happens in some parallel universe: Roscoe's Ultimate Rib Sandwich! Coming soon... if there's ever any leftover ribs to use in the Test Kitchens.

Hey Roscoe - try this recipe for South Carolin mustard sauce. It was great on pulled pork sammiches the other night, and would work well with that rib meat.

1 1/2 cups prepared mustard (your choice of brand and flavor)
5 tablespoons brown sugar
4 tablespoons tomato paste
4 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon garlic powder

Heat all ingredients in a saucepan to dissolve sugar. Allow to cool before using. Makes 2 cups.

Sounds good. I'll give it a try this weekend. Might have to put a little Cholula in it, though.
