Roasted Chicken
You’re in the mood for chicken (hey, it happens). And you just happen to have a chicken on hand, and you think – Beer Can Chicken! So you go to the fridge, pull out the chicken, and a bottle of beer… wait, you need a can! You rummage around the fridge… no can of beer. You search the pantry, no cans, only bottles (hey, it happens). So you crack open that bottle of beer to help you think… do I go all the way to the store for a can of beer? Of course not, you get at least a six pack, dummy. But you take another gulp from that bottle, and you’re thinkin’ now, and you’re thinkin’… I really don’t want to go back to the store.What do you do? Hey, it’s not all bad, you’ve got beer, remember? It’s just not canned. So let’s solve the problem.
Roscoe’s Alternative To Beer Can Chicken Ingredients:
A chicken
Liquid Rub: olive oil, Worcestershire, teriyake or soy sauce, Cholula
Dry Rub: McCormick’s Montreal Steak (or seasoned pepper), bacon salt, chili powder, anything else you want to put in.

Here’s What You Do:
You do the same thing you’d do for Beer Can Chicken, only without the can of beer (you’ve only got bottles, remember?). Set the oven to 350. Mix the wet rub in a container, rub it all over the chicken, inside, too. Then you do the same with the dry rub.

Put The Chicken In The Pan
On a rack, of course, then…
Pour A Beer In The Roaster
And put it in the oven. Close the door, and…
Walk Away
Don’t forget to take your beers, at least two hours worth, because that’s how long the chicken will take. Don’t even open the oven door to check it. Just come back in two hours, take it out, and let it rest. Then carve away, serve it with whatever you want. Sweet potato fries work pretty well here, and maybe a vegetable (optional).
Almost As Good
You don’t get that beer vapor going directly into the cavity like you do with Beer Can Chicken, but this is the next best thing. The beer on the bottom of the pan will steam up and infuse your chicken with all that beer goodness. Don’t forget the cans next time.
