Ingredients:
6 apples – skinned and diced (whatever kind you like, or mix ‘em, Roscoe used MacIntosh)
Dried cherries – a handful
Brown sugar – 2 tablespoons

White Bean and Italian Sausage Soup

Ingredients:
Italian Sausage – 2 lbs., casing removed
White beans – 1 bag dried; Navy or cannellini (as long as they’re white)
Stock – 8-10 cups, make your own or canned, beef or chicken
Celery – 2 stalks, chopped
Red pepper – chopped
Red onion – chopped or sliced
2-3 carrots – chopped
White wine
